Favorite White Bread

 

Combine in large measuring cup:

1 cup warm water

2 ½ tsp. Dry yeast

1 Tbs. Sugar

 

Combine dry ingredients in electric mixing bowl:

2 cups white or brown rice flour

½ cup potato starch flour

½ cup tapioca starch flour

1/3 cup cornstarch

2 Tbs. Sugar

1 ½ tsp. Salt

1 tsp. Baking powder

1 Tbs. Xanthan gum

½ cup dry milk

 

Add to dry ingredients:

3 large eggs

¼ cup oil

½ cup warm water

Yeast mixture

 

Mix for 2 minutes, scraping sides.  Spray 2 loaf pans with oil.  Divide batter in half, and spread into loaf pans.  Put in warm oven to rise 30 min.  Turn oven on to 350, and set timer for 45 minutes.  Done when golden brown.  Cool on wire rack completely before slicing.

Or, shape batter into pizza crust, rolls, or hamburger buns.  Bake at 350 degrees until golden.  If making pizza, spread dough thin (on parchment paper works best), top with sauce and toppings, and then bake at 400 degrees.  Oil pans unless using parchment paper.

*optional; eliminate dry milk, and use ½ cup rice, almond, or soy milk in place of ½ cup of warm water. 
 
Rice Brownies
 
½ cup butter or coconut oil
2 Tbs. applesauce
 
1 cup Sugar
1 tsp. vanilla
2 eggs
½ tsp. xanthan gum
½ tsp. baking powder
2 tsp. corn starch
1/3 Cup baking cocoa
½ Rice flour
½ Cup chocolate chips
 
 
Cream sugar, eggs, applesauce, butter and vanilla. Add remaining ingredients, except chocolate chips.  Mix well, and then stir in chocolate chips.  Top with nuts or sprinkles if desired.  Spray 9x9 pan with oil, and bake 325 degrees, 30 minutes.  Cool. 


Yellow Cake

 

2 C. Brown Rice Flour

2/3 C. Potato Starch

1/3 C. Tapioca Flour

2 C. sugar

1 T. baking powder

2 tsp. xanthan gum

1 ½ Cup. milk

½ Cup. Butter or margarine, softened

1 ½ tsp. vanilla

5 Large eggs
 
1/2 C. fresh blueberries

 

For lemon cake, add 2 tsp. lemon zest. 

 

Combine dry ingredients in mixer.  Add butter and mix until cut in thoroughly.  Add milk and vanilla, mix until combined.  Add eggs, beat 2 minutes. Spray pans with oil.

Bake 375 20-25 min. for 2 round cake pans.

Cupcakes; 375, 18-20 min.

Sheetcake (9X13); 350 40-45 min., until tests done in center.

Works great for fruit cobbler. Cut recipe in half, and bake in 9X13 stoneware.  Bake 350 40-60 minutes.
